Taho

Homemade taho—warm silken tofu with brown-sugar arnibal and sago pearls, the morning merienda that used to come from a magtataho’s tin buckets.

The Story

Taho is breakfast you hear before you see it: the magtataho walking the street with two aluminum buckets, calling “Tahoooo!” Warm silken tofu, dark arnibal, and sago pearls layered in a cup so every spoonful is soft, chewy, and burnt-sugar sweet.

You cannot recreate the aluminum-bucket theater at home, but you can get the texture: tofu so soft it barely holds a cube, syrup cooked until it smells like caramel, sago cooked until the white dots disappear. Serve it warm. Cold taho is a different snack.

If your tofu is firm tokwa, you made tokwa't baboy, not taho. Buy silken or extra-soft tofu.

  • ✦Do not boil silken tofu—it weeps and shreds. Warm it in a steamer or a bowl over hot water.
  • ✦Arnibal is done when it coats a spoon and smells toasted, not burnt.
  • ✦Sago is ready when it is fully translucent with no white core.
  • ✦Layer tofu, then sago, then syrup so the arnibal runs through.

    Instructions

      Bring 6 cups water to a boil. Add sago and cook, stirring often, 15 to 20 minutes until pearls are translucent. Drain and rinse under warm water so they do not clump. Keep warm.

      In a small saucepan, combine brown sugar and 1/2 cup water. Simmer 8 to 10 minutes until the syrup thickens into arnibal and smells like caramel. Stir in vanilla if using. Keep warm.

      Slice silken tofu into large scoops. Warm it in a steamer 3 to 5 minutes, or in a heatproof bowl set over barely simmering water. Do not boil.

      Layer warm tofu into cups. Spoon sago over the tofu. Pour arnibal generously on top so it seeps down the sides.

      Serve immediately while still warm, with a spoon long enough to reach the bottom.
