The Story

This is the silog of dorm kitchens, first paychecks, and mornings after you promised you'd meal-prep. The corned beef is already cooked. The rice is yesterday's. The egg is the only thing that requires hope. Together they look like you tried, which is 80% of breakfast.
If someone says cornsilog isn't a real silog, invite them over, put an egg on it, and watch them go quiet. Names are free. Hunger is not. The plate in your head should be: a mound of sinangag, a fried egg with a yolk that runs like gossip, and a pile of ginisa that still has potato cubes if you did it right.

Garlic rice: heat oil, fry garlic until golden (not bitter brown—we have standards). Add day-old rice, toss until every grain wears garlic. Season lightly. The corned beef will handle the salt personality.

Ginisa: in another pan, sauté onion, optional potato cubes with a splash of water, then the corned beef and its fat. Let it brown a little. You're not making a can, you're making a silog.

Fry eggs how you like them. Sunny-side is the celebrity. Over-easy is the responsible adult. Both photograph well if the yolk still has dreams.
