The Story
Bangsilog puts the national fish on the breakfast plate. Bangus (milkfish) is butterflied, marinated as daing, fried until the skin shatters, and served with rice and egg—the same silog formula as tapsilog and tocilog.
The plate in every carinderia looks like this: golden fried bangus with garlic on top, fluffy white rice, a runny yolk, and a small dish of vinegar with chili for dipping each bite.
Make your own daing na bangus the night before, or use our linked marinade recipe. Either way, pat the fish dry before frying and do not skip the sawsawan.

Pat daing na bangus very dry. Heat oil in a wide pan over medium-high heat. Fry bangus flesh-side down 4 to 5 minutes until golden and crisp. Flip carefully and fry 3 to 4 minutes more. Drain on paper towels.

In the same pan with a little oil, fry sliced garlic until deep golden. Scatter over the bangus.

Warm steamed rice and shape into mounds on plates.

Fry eggs sunny-side up in a clean pan until whites are set and yolks stay runny. Season lightly with pepper.

Mix vinegar, crushed garlic, and siling labuyo in a small dipping dish.

Plate rice, bangus, and egg. Add calamansi halves and green onion. Serve sawsawan on the side for dipping.
